Grilled Corn with Basil Butter
Fresh corn on the cob is one of the sweetest and classic tastes of summer, but if you want a little change, the grown-up tang of basil is just the thing. Blending it with butter captures its flavor and color, which are released by the heat of the grilled corn.

INGREDIENTS
8 tablespoons unsalted butter (1 stick), at room temperature
1 cup loosely packed fresh basil leaves
8 ears corn, husked
Salt
PREPARATION
In a mini food processor, pulse basil and butter together until thoroughly blended and basil is in very small pieces. Remove from processor and scrape into a ramekin or form into a log. Chill until ready to use.
Heat a charcoal or gas grill until hot. Lightly oil the grill with tongs holding paper towels dipped in oil. Grill corn for about 10 minutes, rotating frequently, until lightly charred all over and tender.
Serve each corn with the basil butter on the side. Sprinkle with salt.
