Cardamom Black Pepper Cookies with Cognac Glaze

Cookies for grown ups, with a hint of cardamom and black pepper.


  • PREP TIME: 20 minutes

  • BAKE TIME: 10 minutes

  • SERVINGS: Makes 24 cookies

INGREDIENTS

  • 3 cups all-purpose flour

  • 1 tsp baking soda

  • ¼ tsp salt

  • 1 Tbs ground cardamom

  • ½ tsp ground black pepper

  • dash of freshly grated nutmeg

  • 12 Tbs unsalted butter, room temp

  • ½ cup granulated sugar

  • ½ cup dark brown sugar, packed

  • 2 large eggs

  • 1 tsp vanilla extract

  • GLAZE

  • 1-1/4 cup confectioner's sugar

  • 2 Tbs cognac

  • 2 Tbs cream

PREPARATION

  1. Preheat oven to 350°. Whisk together flour, baking soda, salt, and spices in a large bowl. Set aside.

  2. With a mixer, cream together butter and sugars until light and fluffy, 2 to 3 minutes.

  3. Beat in one egg at a time. Add vanilla. Add dry ingredients. Mix until combined and no flour pockets remain.

  4. Roll teaspoonfuls into balls and place on cookie sheet 1-1/2” apart. Bake 9 to11 minutes, rotating after 5 minutes, until edges are just set and middles are puffed.

  5. Transfer cookies to a cooling rack and cool thoroughly.

  6. Meanwhile mix confectioner's sugar, cognac, and cream together in a small bowl. Add more cream if a thinner consistency is desired. When cookies are completely cool, drizzle the glaze over them with a spoon.
