Cardamom Black Pepper Cookies with Cognac Glaze
Cookies for grown ups, with a hint of cardamom and black pepper.

SERVINGS: Makes 24 cookies
INGREDIENTS
3 cups all-purpose flour
1 tsp baking soda
¼ tsp salt
1 Tbs ground cardamom
½ tsp ground black pepper
dash of freshly grated nutmeg
12 Tbs unsalted butter, room temp
½ cup granulated sugar
½ cup dark brown sugar, packed
2 large eggs
1 tsp vanilla extract
GLAZE
1-1/4 cup confectioner's sugar
2 Tbs cognac
2 Tbs cream
PREPARATION
Preheat oven to 350°. Whisk together flour, baking soda, salt, and spices in a large bowl. Set aside.
With a mixer, cream together butter and sugars until light and fluffy, 2 to 3 minutes.
Beat in one egg at a time. Add vanilla. Add dry ingredients. Mix until combined and no flour pockets remain.
Roll teaspoonfuls into balls and place on cookie sheet 1-1/2” apart. Bake 9 to11 minutes, rotating after 5 minutes, until edges are just set and middles are puffed.
Transfer cookies to a cooling rack and cool thoroughly.
Meanwhile mix confectioner's sugar, cognac, and cream together in a small bowl. Add more cream if a thinner consistency is desired. When cookies are completely cool, drizzle the glaze over them with a spoon.
