Chocolate Dipped Bacon

- Servings: Makes 1 dozen pieces
- Preheat oven to 350º. Cut each slice of bacon into 3 equal pieces. Place atop a rack set over a baking sheet. Bake 20-30 minutes until bacon is browned and crisp.
- Meanwhile, place chopped chocolate in a small metal bowl. Warm the bowl of chocolate by resting atop a saucepan of simmering water. Turn off heat. Let chocolate sit undisturbed for 2 minutes, then stir to melt chocolate. As soon as all the chocolate is melted, remove from heat. Stir until cooled and thickened.
- Transfer cooked bacon pieces to a paper towel-lined plate. Blot the tops with another towel. Dip each piece halfway in chocolate and let excess drip off. Place on prepared baking sheet. Let stand at room temperature until chocolate is dry and set.
