Food and Wine covers

It’s always nice to be trusted with styling a cover for a food magazine, and I get to do so often, but in the case of the 35th anniversary March issue of Food & Wine magazine, I ended up with THREE covers! Sometimes magazines set aside a separate day to shoot covers, usually a reinterpretation an image that has already been shot for a story inside the magazine, but sometimes we do what’s called a “cover try” in the course of shooting a feature story. That was the case with these covers. The food was all so delicious and beautiful, that apparently they couldn’t choose just one image, and went with three different covers, a very unusual move. I was shooting with the very talented photographer Con Poulos and Creative director Stephen Scoble for this story that features the “Legends” of the food world, namely, Julia Child, Jacques Pepin, Marcella Hazan, Paula Wolfert, and Jean-Georges Vongerichten. All truly legendary people who have been longtime contributors to Food & Wine magazine. I have to say, it was so refreshing to cook these mostly classic recipes for this shoot. It’s kind of hard to improve on this kind of simplicity, where the technique is what makes the dish really shine. I especially loved cooking Paula Wolfert’s Duck with Green Olives, Marcella Hazan’s Fish in Crazy Water (Aqua Pazza in Italian), and Jacques Pepin’s Beef Stew In Red Wine sauce and his Plum Galette. The flaky buttery crust was to die for, even with out of season Chilean plums, which by the way are not bad when you cook them. I would make any of the dishes in this story for guests anytime.
